Mont Rocher, Vieilles Vignes Rosé, Pays d'Oc, France

These old vine Cinsault grapes grow in the shadow of St Chinion in Rousillon, south of France. The grapes are checked throughout August to find the right day for harvest. 

Once at the winery the grapes undergo a gentle maceration on the skins to extract some colour before being gently pressed and fermented at a low temperature. This has the subtlety in colour of a Provence with light strawberry and raspberry flavours and a crisp acidity.
