Coola Hills Pinot Noir, Mount Gambier, Australia 2022

Influenced by volcanic soils and ocean breeze, Mount Gambier is rapidly becoming one of Australia's most exciting wine regions. Tucked right in the far south east of South Australia, the cool climate makes it the perfect ripening conditions for Pinot Noir. In collaboration with Les Caves de Pyrene, Xavier Goodridge is at the reigns for Coola Hills. Grapes are hand harvested, fermented with indigenous yeasts in open-top stainless steel tanks before being aged in old barriques. Unfined and unfiltered with minimal amounts of sulphur added at bottling.
